miso chicken & rice soup

main | serves 2 | prep time 5 minutes | cook time 15 minutes


  • 1 chicken breast
  • 3 tablespoons of oil
  • 160 grams of rice (any kind, white or brown)
  • 1 sachet of itsu miso (original or vegetarian)
  • 1 handful pumpkin seeds
  • Green vegetables of choice (we recommend tender stem broccoli and green beans)
  • step 1

    Boil water and cook the rice according to instructions. Heat a large frying pan or wok with oil

  • step 2

    Stir fry the chicken for 8 minutes until cooked. Set aside and shred into small pieces with a fork

  • step 3

    Stir fry the vegetables until tender. Drain the rice and add the rice and chicken back into the pan

  • step 4

    Add the sachet of itsu miso and gently fry everything for 1 minute. Add 1 large mug of boiling water and simmer gently for 5 minutes

    To serve, pour into a large bowl and sprinkle with pumpkin seeds
