classic chicken ramen

brilliant-broth | serves 2 | prep time 5 | cook time 10


  • 1 pack itsu chicken ramen brilliant’broth
  • 2 chicken breasts
  • 1 free range egg
  • 100g dry wholewheat noodles
  • 2 handfuls stir fry veg
  • step 1

    To cook the chicken, preheat a grill pan over a medium heat. Add the chicken, and cook until golden brown [about 5-7 mins]. Flip the chicken over and cook for another 4-5 mins, [until cooked through]. Set the chicken to one side.

    Add stir fry veg to the grill pan and heat for 2 mins.

    Meanwhile place the noodles and the egg in boiling water and cook for 5-6 minutes [until noodles are soft]. Drain and set aside.

    Heat the brilliant’broth in a small saucepan until piping hot [do not boil].

  • step 5

    To assemble the ramen divide the noodles between two bowls, and add a handful of stir fry veg to each. Top with sliced chicken, half an egg [peeled], and ladle over the broth.
